Ali Ahmed Aslam is said to have come up with the dish in the 1970s when a customer asked if there was a way of making his chicken tikka less dry.

His solution was to add a creamy tomato sauce, in some versions of the story a can of tomato soup.

In our old local Indian, that sadly closed due to housing development, they used to do a beer called 'Sunny Beach' which is a really nice, light lager and perfect with curry.

Although I've not seen it in any other curry house since.

With Nurse etc, I have no doubt that Indian food/Curries are the best foods you can eat. Sadly I'm not a connoisseur though, had some MATES in the UK who knew the ins and outs of a menu, but I'm just happy ordering what I know and use to. Don't like drinking beer with a curry though, too heavy.

I used to follow recipes for the base sauce, then the curries, but over the years I've just winged it by adding stuff I like or think will work, I make my own dips, breads, etc.

have toned down on curries over the years, but would have to have a good old vindaloo. Leave the potato til last and then eat it in thin slices. Peshwari naan to mop it all up.

Never understood why pubs don't do popadoms and pickles as bar snacks. If there's one food to ensure that people will have that extra drink, then it's that.

CS, do you follow recipes or come up with your own?

Been cooking curries for years as well, but mostly recipes, only just started 'winging it'. The Atul Kochhar recipes are my favourites, especially if they include the Benares mixture of spices.

Fair enough to Russ, I like to think of myself as an expert on Indian food and taught myself to cook many dishes from an early age.

My mate loves their Mushroom Bhaji and they also do it as a main and he has it with chicken. It's bloody good.

Traditionally yes.

But our local Indian does a set of side dishes in 'main' form of which you can add the meats or prawn.

Try a Bengali Chanar Dalna if you can. Main ingredients are tomato, onion and cumin. But its not really tomatoey. One of my favourite dishes. Especially with king prawn.
